I love this salad for so many reasons! Above all... it is delicious and super healthy. It’s really easy to make, you can change it up however you like and use up any veggies you have in the fridge. Leftovers, (if there are any) make a great lunch the next day.

The inspiration for this salad is a traditional Greek dish, Louvi which growing up was really not a favourite. Now I absolutely love black eye peas... maybe almost as much as chickpeas! They are just delicious with a wonderful texture and the perfect base for so many dishes. Their only downside is that for best results you need to use dried ones and that involves a little bit of effort... but I promise, it’s worth it.

This salad is as delicious as it is fast and easy. Chickpeas, cherry tomatoes, black olives, toasted pine nuts and pesto. I used some I already had in the freezer so preparing this salad took even less time
