Roast Tomato Sauce

Homemade roast tomato sauce. I love this sauce! It’s deliciously rich and sweet and packed full of the antioxidant goodness of tomatoes. It’s easy to make and so versatile. We love it plain over pasta but it’s also a great base for bolognese, in lasagne, ratatouille, tomato soup ... pretty much anywhere you’d use passata. I promise you it’s delicious!

My family love pesto and I make it all the time. It freezes beautifully so I often double up and freeze it. This version is a simple pesto with a load of raw spinach added in for extra veggie goodness. It’s so tasty, easy to make and full of good stuff!

Honey & Thyme Roast Carrots

These are an absolute favourite in our home and I never seem to make enough of them. They are a perfect side dish but I often have a big bowlful with rice or chickpeas and it’s sooo good. I love the addition of thyme but they are just as delicious without. The main thing here is the cooking... long slow cooking for the carrots to cook through and bring out all their amazing natural sweetness.

My cauliflower obsession continues… and this may be one of my favourite dishes ever! BUT so many recipes for bang bang cauliflower have far too many ingredients and even more steps. I like easy, simple recipes that are still delicious. So I’ve been playing around with this one and I’m really happy with this version.
